Bole

A signature delicacy of the Savannah Region. It is made from dried yam peelings ground into flour, steamed until dark and fluffy, and typically served with spicy pepper sauce (shito), sliced onions, and fried fish or meat.

A popular northern staple made from corn or millet flour. It is incredibly soft, light, and traditionally served with a green vegetable soup made from ayoyo (jute) leaves and a rich meat stew.

A staple dish of rice and beans cooked with dried millet stalk leaves, giving it a distinct reddish-brown color. It is a massive local breakfast favorite, often piled high with spaghetti, gari (cassava flakes), shito, and boiled eggs.

This is the most iconic drink of northern Ghana. It is a locally brewed beer made from fermented sorghum or millet. It is served in a calabash and can be enjoyed fresh and sweet (unfermented/mildly fermented) or aged and sour (alcoholic).

A thick, nutritious smoothie-like drink made from blended millet, ginger, cloves, and pepper. The mixture is rolled into balls, boiled, and then mashed into fresh, cold milk (often fresh cow's milk) and sweetened with sugar.

A deeply red, tart, and refreshing juice made from dried hibiscus petals. In Bole, it is heavily spiced with local ginger, cloves, and black peppercorns, then served ice-cold.

A caramelized corn beer made from fermented maize and sugar. It has a deeply rich, sweet, and slightly smoky flavor and is always served chilled with ice.
